This recipe is gluten free, low carb and keto friendly, but if you don’t follow any of those ways of eating, you can use regular all-purpose flour instead of almond flour. Kids tend to really enjoy cod because it’s very mild and there is no “fishy” taste. White fish, like cod, is very versatile and can easily be baked or fried, as well as used in a wide variety of recipes like fish stew and fish tacos. If you don’t have cod, or don’t care for it, you can use pretty much any white fish. It takes just 15 minutes from start to finish. This fried cod is the best fried fish that I’ve had in a long, long time! Why This Recipe Works I wanted to recreate that same kind of dinner for my family. Flounder is another mild, white fish that the boys in my family would fish for at the beach here in Delaware. Growing up, the only seafood that I would eat, besides shrimp, was fried flounder. To make the crumbs, crush the Ritz crackers into the bowl of a food processor fitted with the steel blade and process until finely ground.Pan-Fried Cod is a delicious, family-friendly recipe that is perfect for a quick and easy dinner any night of the week. Sprinkle with salt and serve hot with the pan juices and lemon wedges. Return the pan to the oven for 12 minutes, until the fillets are just cooked through in the center, depending on the thickness of the fish. (Don’t worry if some crumbs get into the sauce!) Pat the crumb mixture evenly onto the fillets, pressing gently to help them adhere. Remove the fish from the oven and pour the wine and lemon juice directly on the fillets. Add the melted butter and stir until evenly moistened.

Meanwhile, combine the cracker crumbs, panko, parsley, garlic, lemon zest, and 1 teaspoon salt in a small bowl. Sprinkle the fish with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and bake for 10 minutes. Place the fish fillets in the dish and turn to coat both sides with the oil. Pour 2 tablespoons olive oil in a 9 x 9-inch ceramic baking dish (it should be just big enough to hold the fish) and tilt the dish to coat the bottom with oil.
